Coconut & Lime Loaf

This zesty loaf is so scrumptious and a great ‘sweet treat’ for your spring and summer entertaining. Lime and coconut are the perfect pair, delivering a light, refreshing and wholesome loaf. It is also so easy to make, and requires minimal effort.

This loaf is completely free of refined sugar, only sweetened with honey, and contains no grains. Making it great for those with dietary restrictions. This loaf is gluten-free, dairy-free, wheat-free, grain-free and this list goes on! Feel free to substitute or combine any citrus for the lime in this cake. Serve it toasted, fresh and with a generous helping of coconut ice-cream if you so wish. Imagine sitting by the pool with some home-made iced tea and slice of this loaf. Perfection!

INGREDIENTS LIST:

LOAF INGREDIENTS

  • 2 cups Flannery’s almond meal 

  • ½ cup Flannery’s desiccated coconut 

  • 1 tsp. Bob’s Red Mill baking soda 

  • ¼ tsp. salt 

  • 1-2 Tbsp. organic lime zest 

  • ¼ cup organic lime juice 

  • 3 organic eggs, beaten 

  • 1 tsp. Very Vanilla vanilla extract 

  • 1 Tbsp. Chef’s Choice melted coconut oil 

  • ½ cup organic honey

GLAZE

  • 2 Tbsp. organic honey 

  • 1 tsp. organic lime zest 

  • 1 Tbsp. organic lime juice

DIRECTIONS:

  1. Preheat oven to 160C. Grease a loaf pan with coconut oil or line with baking paper. 

  2. In a large bowl combine all the dry ingredients and whisk together. In a medium bowl combine all the wet ingredients and whisk together. 

  3. Add the wet ingredients to the dry ingredients and whisk until combined. 

  4. Pour mixture into prepared tin and smooth the surface with a spatula. 

  5. Place in oven for approximately 30 minutes or until edges of the loaf are golden and/or cake tester comes out clean. Time will vary greatly depending on the size of your loaf time, so keep an eye on this one!  

  6. Whisk together all the glaze ingredients. Once the loaf has cooled for 15-20 minutes, it can be removed from tin. Pour glaze over the surface and serve.
