Chilli Tuna Bites

You may think there is something a little ‘fishy’ about this recipe and quite frankly it’s a little ‘corny’! However, they are so yum! Give ‘em a go!

 

MAKES: 12

PREP TIME: 15 MINS

COOK TIME: 30 MINS

INGREDIENTS:

  • 2 small or 1 1/2 large sweet corn cobs, kernels removed

  • 180g can tuna in chilli oil (I use Sirena), drained

  • 5 eggs

  • 2/3 cup cottage cheese

  • 1 brown onion, finely diced

  • 1/2 cup grated cheddar cheese

  • 1 long chilli, seeds removed and finely sliced

 

DIRECTIONS:

  1. Preheat oven to 180C and lightly grease a non-stick muffin pan.

  2. In a large bowl lightly whisk eggs, then mix in cottage cheese and season with salt and pepper.

  3. Mix in corn, chilli and onion. Next, gently fold through tuna, so it is still chunky.

  4. Divide mixture amongst all 12 muffin spaces and top with grated cheddar.

  5.  Place in oven and bake for approximately 30 minutes, or until they are golden.

VARIATIONS & TIPS:

  • If you don’t like chilli, use tuna in olive or spring water and add half a red capsicum, finely diced, instead of chilli.

  • If you would like a little more heat, add a pinch of of cayenne pepper in the mixing process.

  • These are a great snack, light meal, something different for the school lunchbox or to take to a picnic. They are also really economical!
